Easy and Healthy Cranberry Apple Crumble!

Hi Readers! This is Beverley from Born to Sweat, bringing you my favorite dessert/breakfast/snack, (whatever you want to call it) of summaaaaa.
Before I begin, just want to give a shout out to my girl Natalie for letting me post on her wonderful blog. Natalie is literally one of my favorite people that I’ve never met. She is supportive, friendly, posts delicious recipes, and has a super cute snapchat which you guys should all follow.
Anyway, back to me.
What are your thoughts on pie? For me, I’ve never been one to really appreciate a good slice of pie. I would always take the crust off and just head straight for the filling. Even a scoop of ice cream or some custard cream could never tempt me to eat that plain, dry, crust.
But no boyfriend wants to share a piece of pie with a person who is just going to eat the filling. That just sucks for them.
Which is why I LOVEEEE making crumble instead. Crumble is basically the inside of a pie, topped with lip smacking granola. It doesn’t even need ice cream or custard to make it great (although I will never say no when offered).
Basically I’ll put any fruit in crumble. I won’t discriminate. The juices of the fruit plus the sugar NEVER fails to be delicious. So for this crumble I had a bunch of leftover cranberries, a few strawberries (totally optional, I just wanted to use them up) and a couple apples that were going soft. That combination sounded divine.
FYI – this crumble is not gluten free although it definitely CAN be. All you have to do is sub out regular flour with almond flour or cornstarch and you’re good to go.
- For the crumble:
- 1¼ cups rolled oats
- 3 tbsp flour
- 6 tbsp sugar
- 6 tbsp butter melted
- 1 ½ tsp baking powder
- ½ tsp salt
- For the filling:
- 1 cup cranberries, washed
- 2 apples, peeled and sliced
- ½ c strawberries (optional)
- 1 tbsp lemon juice
- ¼ c sugar
- 3 tbsp flour (use oat flour to make gluten free)
- Heat your oven to 375 F and grease a 9 x 9 inch baking dish
- In a large bowl add the cranberries, sliced apples, lemon juice, sugar and flour. Mix until the fruit is fully coated with the flour mixture.
- In another bowl, add the oats, flour, sugar, baking powder and salt. Stir until combined, then slowly pour in the melted butter.
- Pile the cranberry/apple mixture into the baking dish and spread evenly. Add the oat topping on top and smooth out.
- Bake uncovered for 25 minutes.
- Then cover with a lid, and bake for 10 more minutes.
