This Crunchy Apple Cinnamon Granola Salad has only 7 ingredients (including the dressing)!
I’ve been gluten free for 7 and a half years now (yes, I was one of those weirdos that was gluten free before “gluten free” was even a thing) and because I was gluten free before gluten free was even a thing, I had limited resources for getting gluten free ingredients! Back then, there wasn’t a gluten free aisle in the grocery store and you couldn’t just go to a restaurant and ask for the gluten free menu. You pretty much just had to go back to the basics and stick to your fruits, veggies, meats, or any natural whole food that was naturally gluten free.
When I found out I had a sensitivity to gluten, food packaging normally didn’t state whether or not something was gluten free, so the easiest way to avoid gluten was to just not eat processed foods. Basically, I just avoided anything that came in a box or a package. SO needless to say, all of my salads definitely did not have croutons. That was a sad, sad day because I loved croutons! Not even so much the croutons, but the CRUNCH of the croutons is what I missed!
So since there was no such thing as gluten free bread (or at least not conveniently accessible) and I couldn’t make my own croutons, I had to get creative! I would literally throw in anything I could get my hands on that had a “crunch”! That meant fruits, veggies, and nuts such as apples, jicama, carrots, celery, snap peas, almonds, walnuts…you name it, I tried it. There were certainly quite a few delicious variations, but in my personal opinion, none were as good as when I added granola!
The granola was like the ultimate crunch factor, and back then, I made my own. Now my go-to granola is Blissful Eats granola because A – it’s made with all natural, high quality ingredients, and B – I can’t make it as good as the queen of granola herself, Nicole Culver, so why would I even try? Haha, I mean seriously, it’s just easier to buy it and know that I’m eating the healthiest, tastiest, nutrient packed granola around.
As soon as I got my hands on this Apple Cinnamon Harvest Granola, I mixed it in with some simple ingredients and the sudden WOW factor was there! Since this granola already has all of the all-natural and organic-everything fix-ins such as organic sunflower seeds, organic pumpkin seeds, organic apples (yep, real apples) and more, all I had to do was add a few more ingredients and it made for the crunchiest and tastiest salad around!

This recipe has only 7 ingredients (including the dressing)! All you need is:
Mixed Baby Lettuce
Organic Golden Delicious Apple (or any variety of your choosing)
You can’t go wrong with a salad that you can literally throw together in 5 minutes! I also love all of the elements going on here – light and fruity with the apples and mixed greens, plus the added spice from the cinnamon and sweet-tartness from the honey-balsamic dressing! Not to mention the crunch from the granola! Makes for a perfect go-to menu item for your next brunch!
- Mix together all of the salad dressing ingredients (I usually put in an airtight container and shake well), set aside.
- In a large salad bowl, combine all salad ingredients and mix until evenly distributed.
- Pour salad dressing over salad and mix together with salad utensils.
- Serve on small salad plates and enjoy!
