As I sit here on a plane to Ixtapa, Mexico writing this first blog post of 2016 (as my husband just accidentally dumped a full cup of ice water all over my legs), I’m super excited for this next year ahead. One of my resolutions is to learn how to let things go and be more easy going! I would usually get PISSED over something like this, but not this year. I’m just gonna let it go and look at the positive. At least I have a spare pair of shorts in my bag and at least it didn’t go all over this laptop or my phone 🙂 The glass is now half full after all!
I don’t have a ton of “resolutions”, rather goals and areas of focus. One area for A Fit Philosophy that I’d like to spend some more time on this year is building the bank of healthy savory recipes for you all!
Most of you know me as the queen of protein pancakes and you know I love my sweets and breakfast foods too! However, I do eat savory foods every now and then (haha, I promise!), and who says you can’t have a little sweetness with your spice?!?
The other day my husband wanted to make some meatballs, so I decided to put my little fit philosophy spin on them! I wanted to make them spicy, so I thought about adding some jalapeno and chipotle seasoning for a little kick and what better to balance that heat than some honey! And there ya have it, Jalapeno Turkey Meatballs with Chipotle Honey Sauce were born! YUMMM!
I do love my honey, but it can be a real mess to cook with. To avoid that sticky situation in my kitchen, I used Nektar Naturals Honey Crystals, which is pretty much the best invention on this planet since sliced gluten free bread…no joke peeps. It made the clean up for my Jalapeno Turkey Meatballs with Chipotle Honey Sauce super easy and certainly did not cut out any of that amazing honey taste.
Another one of my little healthy tips is to swap out ground turkey for ground hamburger meat whenever possible. Ground turkey is a healthy alternative to ground beef and is an easy substitute to any meal. Ground turkey is also a healthy, nutritious and a lean source of protein.
- Jalapeno Turkey Meatballs
- 1 Package Foster Farms Ground Lean Turkey (1.25 lbs)
- ½ Yellow Onion, diced
- ¼ tsp Salt
- ¼ tsp Black Pepper
- ½ Jalapeno Pepper, diced
- 2 Garlic Cloves
Chipotle Honey Sauce
- 3 TBS Nektar Naturals Honey Crystals
- 2 tsp Apple Cider Vinegar
- ½ tsp Mexican Chile Powder
- Preheat oven to 375 degrees.
- Mix all jalapeno turkey meatball ingredients in a medium bowl until well mixed.
- Scoop turkey meatball mixtures by a heaping tablespoon, form into a ball with hands and place on heated skillet.
- Cook on medium-high heat for about 12 minutes, rotating so that all sides brown evenly.
- Wrap skillet handle in foil and place skillet in oven and cook for 5 minutes.
- While turkey meatballs are in oven, combine chipotle sauce ingredients in a small sauce pan over low heat.
- After 5 minutes, remove turkey meatballs from oven, pour chipotle honey sauce over meatballs and place back in oven for 5 more minutes.
- Remove from oven and serve!
And here we are. A brand new year. A fresh start. New beginnings. New opportunities. New goals. New incredible memories to create.
2015 was a really incredible year for me. It was filled with tons of traveling to new and exotic places like Thailand, Greece, Italy, Mexico, and Napa Valley. Many of my closest friends and family welcomed a new baby or found out they were expecting! We bought our very own house in southern California, where we’ve always dreamed of living! My career is going great and I was recently promoted! It really was an incredible year for me, but you know what…2016 will be EVEN BETTER!
I believe that all of these things that we want in life go hand in hand with being healthy! You have to take care of your body, inside and out, in order to conquer any of your goals in life. Also, just like anything else you want in life, you have to work hard at staying healthy and fit too! Cheers to a very HEALTHY and HAPPY new year!
