I can’t believe it, can you?? Only a few more days left in the year! If you read my blog frequently (or even just stopping by the for the first time today…HI!!! Welcome!!), then you know plain ol’ chicken and broccoli is just not my thing. I like getting creative in the kitchen, because healthy eating should NOT HAVE TO BE BORING!!
You also might notice that I LOVE my desserts and I will eat desserts for breakfast, lunch, and dinner…why? Because I “healthify” my desserts and because I can 🙂
Mug cakes are one of my absolute favorite things to make! They are SO ridiculously easy to make and require very little ingredients and very little time! With everything going on in our lives, we just don’t have the time to bake an actual cake on the regular, even if we wanted to!
Have you noticed that nowadays protein powders come in all types of delicious flavors too? Just hearing the flavors makes my brain get all crazy thinking of what I could make with some of these! So this weekend I had some time to do some experimenting and thought, what about a Vanilla Chai Protein Mug Cake topped with Chocolate Raspberry Protein Frosting?!? WHATTTT??? YESSSS!!!!
Since it’s winter and it’s been super crazy cold here in southern California (yes…I promise it has been guys), I’ve been craving warm cozy flavors like Vanilla Chai! YUMMMM Chai is literally one of my all-time favorite winter flavors. And a Vanilla Chai Protein Mug Cake topped with Chocolate Raspberry Protein Frosting…even bett-ah!!
- 1 Packet Vanilla Chai PlantFusion Vegan Protein Powder
- 2 TBS Almond Meal/Flour
- 1 tsp Baking Powder
- ¼ Cup + 1 TBS Unsweetened Almond Milk
- 1½ TBS Chocolate Raspberry PlantFusion Vegan Protein Powder
- 1 tsp Raw Cacao Powder
- 1½ TBS Water
- 2 TBS Unsweetened Vanilla Almond Milk
- Combine mug cake ingredients in a coffee mug and stir together until well mixed, set aside.
- In a separate small dish, combine frosting ingredients and mix until it looks like a frosting consistency. Heat for about 15-20 seconds or until warm, remove from microwave.
- Place mug cake in microwave for about 40-50 seconds (Please keep in mind this varies by microwave and also depends on how you like the consistency of your cake).
- Remove mug cake from microwave and drizzle with frosting.
