Do you ever buy an ingredient for a recipe and have way too much left over? It happens to me all of the time and usually I’m left deciding on whether or not to freeze the ingredients, use in other recipes, or just toss…which I HATE wasting food, so the third option is not usually what I do. Didn’t your grandma always tell you there are starving children out there that would give anything for those leftovers?? I guess that rule has stuck with me all these years!
I had some Medjool dates left over from the Turkey Bacon Wrapped Coconut Butter Stuffed Dates I made a few weeks ago, so I used them in a bunch of random recipes! What a horrible thing to have too much of?? NOT! Medjool dates are soooooo delicious, I could add them to everything! This salad was one was my favorites though! It makes for a simple and delicious pre-dinner salad or you could even top with some grilled chicken for an entree salad!
Baby Spring Mix, Date, & Radish Salad (makes 1 serving):
- 1 1/2 Cups Baby Spring Mix
- 1 Medjool Date, sliced
- 1/2 Radish, sliced – almost shaved
- 1 tsp shredded Parmesan
- 1 tsp Olive Oil
- 2 tsp Balsamic Vinegar
- Crushed Black Pepper, to taste
- Optional: Add Grilled Chicken for Entree Salad
Slice medjool date and radish and set aside. Mix olive oil and balsamic vinegar and set aside. Place baby spring mix on plate, top with dates, radishes, parmesan, olive oil/balsamic dressing and crushed black pepper to your liking. If having as an entree salad, top with grilled chicken and serve. Enjoy!
