Growing up in Arizona and now living in California, there is NO WAY that I can deny some good Mexican food! Tacos, burritos, enchiladas, nachos, taco salads, and the list goes on and on! Ayye mi madre I just can’t get enough!! Only one slight problema….when you go out to a Mexican restaurant, the food is usually deep fried in oil and topped with pounds of full fat cheese! NO BUENO!
Side note – do you guys ever go on kicks where you’ll eat the same thing every single day or not necessarily the same exact thing, but the same “theme” every single day for a while?
Well I have definitely had my fair share of Mexican food kicks and there is absolutely NO WAY I’d be feeling good about myself if I didn’t healthify it up! Here is a go-to salad I like to make for lunch and dinner whenever I’m on my Mexican kick 🙂 Best part about it is that it tastes amazing and I still feel GREAT after!
Healthy Ground Turkey Mexican Salad (makes 1 serving):
- 4 Oz Lean Ground Turkey Meat (I used Jennie-O)
- Approximately 2 Cups Romaine Lettuce Salad Mix
- 1/4 Avocado, sliced
- 1/2 Roma Tomato, diced
- 1/3 Cup Reduced Fat (2%) Shredded Mexican 4 Cheese Blend
- 2 TBS Salsa
- Light Sour Cream, Avocado Salsa, Hot Sauce (Optional)
- 1/2 TBS Mexican Chili Powder
- 1/4 tsp Crushed Red Pepper Flakes
- 1/4 tsp Dried Oregano
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
- 1/4 tsp Ground Cumin
- 1/4 tsp Paprika
- Salt & Pepper to taste
Prepare taco seasoning in a small bowl, set aside. Cook ground turkey in a skillet over medium heat and stir in taco seasoning. While cooking arrange romaine salad mix on plate. Once ground turkey is cooked, place on top of salad, top with avocado, tomatoes, cheese, salsa and any other toppings you prefer! Enjoy!
