Thailand. Words alone cannot explain Thailand. My words for you are: GO THERE, GO THERE NOW!
A few months ago, some of my girlfriends from Arizona were out visiting here in Los Angeles. They had recently planned a girls trip to Thailand and had just bought their plane tickets a few weeks prior.
After a few glasses of wine, we were talking about their plans and one of them was like “You should come! Girls Trip!” I quickly replied with something like “Are you crazy?!? There’s no way!!” I mean the trip was only a couple months out, I’m married, I had just got back from a week long vacation in Mexico and have a trip to Greece and Italy in June…and the list goes on!! There was just no way I could swing it!
The more I thought about it, the more I REALLY wanted to go. Everyone I know that had been to Thailand raved about it! There is not one person I know that’s just like, eh..Thailand…it was just “OK”. No…it’s more like “YOU HAVE TO GO, IT’S MAGICAL!!”
So, with that being said, I made it happen! Within a week, I had my plane tickets booked and was completely on board and ya know what…It was the best decision I ever made. When I tell you Thailand was incredible, magical, beautiful, serendipitous, and peaceful…well friends, that’s quite an understatement because IT WAS LIFE CHANGING. I still can’t even believe a place like this even exists in this world of ours!
I feel like I’m pretty well-traveled and this was the first place I’ve ever been in my life that I could truly disconnect, turn that switch off, and really just be in the moment. The people, the food, the culture as a whole was just so amazing and helped me open my perspective on my life soooooo much more than I could ever imagine.
So my advice, GO!! GO TO THAILAND NOW!!! 🙂
Alright, so I know what you guys want, you want the recipe for this insanely delicious looking Banana Nutella Thai Pancake don’t ya?? Ok, fine, I’ll give it to ya.
So one of the most popular types of street food in Thailand are their “Thai Pancakes”. You can find these at any Thai market (day or night) and even in most shopping areas. You can order your pancake plain or choose from a variety of fillings, with the most popular obviously being banana and Nutella, because duh, who doesn’t LOVE Nutella?!?
We tried the Banana and Nutella Thai Pancake at Railay Beach and don’t get me wrong, it tasted amazing, but I just couldn’t get myself to have more than one bite. It was just loaded with oil, oil, and more oil! Gosh, those Thai pancakes really had potential and I knew I could find a way to “healthify” them once I got home.

After a few attempts at home, I finally NAILED IT!

Banana Nutella Thai Ingredients (makes 3 Thai pancakes):
- 1 Cup Unsweetened Vanilla Almond Milk
- 1/4 Cup Eggbeaters
- 3/4 Cup Rice Flour
- 1 1/2 TBS Coconut Flour
- 1 tsp Baking Powder
- 2 TBS Stevia
- Dash of Salt
- 3 TBS Nutella
- 1 Large Banana (about 150g)
Mix rice flour, coconut flour, baking powder, and salt in a large mixing bowl.
In a separate bowl, combine eggbeaters, unsweetened almond milk, and stevia.
Pour wet mixture into bowl with dry mixture and stir until smooth.
Heat pan (you can just use a regular ol’ frying pan) over medium-high heat, without any spray.
After about 1 minute, spray with cooking spray or coconut oil spray.
Add about 1/2 cup batter and swirl pan around in a circular motion so that the batter spreads out evenly in the shape of a circle. Continue to swirl and let cook for about 1 minute.
Once the bottom is slightly browned (after small holes appear on surface of pancake), flip over and cook for about 30 seconds to 1 minute.
Turn down heat, spread about 1 TBS Nutella on pancake, top with about 1/2 banana sliced (50g) and fold pancake in half.
Transfer folded pancake to plate, cut into squares (just like they do in Thailand). Either top with more Nutella and bananas, or serve as is! Enjoy!
