Didn’t your grandma always tell you to never judge the book by it’s cover?? Well, don’t judge your mashed potatoes either!!
I currently follow the “IIFYM” (If It Fits Your Macros) a.k.a. Flexible Dieting lifestyle and every once and a while, I’ll consume most of my carbs during the earlier part of my day, leaving me with very little to spare for dinner! This is when I have to get creative and come up with filling foods that aren’t too high in carbs! That’s when I discovered Cauliflower Mash!
Ingredients (makes 1 serving):
- Approx 2 Cups (200g) Cauliflower, cooked
- 1 TBS Fat Free Cream Cheese
- 1 tsp Olive Oil (or butter, yogurt spread, etc.)
- 1 tsp Minced Garlic
- 1 1/2 TBS Unsweetened Almond Milk
- Himalayan Sea Salt & Pepper, to taste
First boil cauliflower for about 8-10 minutes, or until very soft. Place all ingredients together in a blender and blend until smooth.
It’s as easy as that! Serve warm as a side with your meal & enjoy!
