If you follow me on Instagram or Facebook, you know the hubster and I just got back from a week vacation in Ixtapa, Mexico to celebrate our 5 year wedding anniversary! We literally took the entire week off to relax and disconnect from the world!
Since we were wrapped up in all of the holidays and on vacay for so long, I’ve been a bit behind on posting recipes, but did release my brand new Protein Pancake Recipe e-Book Vol. 1 that was released on January 1st! If you haven’t downloaded your copy yet, be sure to do it soon! (Updated 8.18.15 – NEW PROTEIN PANCAKE RECIPE e-BOOK HERE!)
Although that trip was incredible, we are very happy to be back home and get back to our normal lives! Since I usually tend to post recipes with breakfast or sweets, I’ve decided to change it up and give ya something new for 2015! Right before we left more Mexico, we wanted to get rid of some of the food we had on hand, so threw together these Baked Turkey Sausage Spaghetti Squash Boats and wowza they were amazing! They were really super easy too!
- 1 Half Spaghetti Squash (or 2 Cups), Cooked (see recipe here)
- 1/2 Cup Spaghetti Sauce (or Pizza Sauce)
- 1/4 Cup Fat Free Shredded Mozzarella Cheese
- 1/2 Jennie-O Spicy Italian Turkey Sausage
- Pizza Seasoning to taste (or oregano, basil, red pepper flakes, and garlic powder mixed)
While your Super Simple Spaghetti Squash is baking in the oven, place turkey sausage on a heated skillet over medium heat. Take wooden spoon and break up turkey sausage into small pieces and cook until done, set aside.
Once your Super Simple Spaghetti Squash and turkey sausage are cooked and ready, top with sauce, turkey sausage, shredded mozzarella, and pizza seasoning.
You can choose to scoop the spaghetti sausage and place on plate, or just eat right out of the boat! Enjoy!
