My definition of “healthy” has definitely changed since I first created FitFilosophy! I used to think that “healthy” just meant low calorie, low fat, or low carbs and that eating sugar free and fat free foods were great! It’s low calorie, so I’m not going to gain weight right??? That’s really all I was concerned about, however along my health and fitness journey, I’ve learned a lot of valuable information from fitness and nutrition professionals and that is absolutely not the case.
We only have one body for the rest of our lives, so why would we cause harm to it by eating foods that contain harmful chemicals and artificial preservatives? I started to observe how I felt after eating certain foods and noticed that I was much more satisfied after eating foods that were high in nutritional content, even if they did have more fat or more carbohydrates. I also didn’t gain any weight, in fact I lost weight! It was like my body was thanking me for finally giving it the real nutrients it needed!
In October of 2013, I decided to make a commitment to eat 100% ALL NATURAL! Once I made the decision to eliminate all artificial foods and sweeteners, I not only noticed differences in my body, but also in how I felt overall. I definitely still have a sweet tooth,so that’s when I get to have fun in the kitchen and experiment with fun, creative recipes!
One of my first recipe’s on this blog was for the deliciously tasting Lemon Blueberry Pancakes. Only one slight problem, they have artificial ingredients in them, so I’ll no longer eat them! I’ve been craving them like no other, so I started my mission to make the perfect 100% ALL NATURAL version of them and finally nailed it!
Blueberry Ricotta Protein Pancakes Ingredients:
- 1/2 cup liquid egg whites (2 egg whites)
- 1/4 cup unsweetened almond milk
- 2 TBS fresh squeezed lemon juice
- 1 TBS low fat Ricotta
- 1 TBS (7g) About Time Vanilla Whey Protein
- 1/4 cup oat flour
- 1/4 tsp xanthan gum
- 1 tsp baking powder
- 1/8 tsp salt
- Lemon rind shavings (A MUST!)
- 1/8 cup fresh blueberries
- Liquid stevia (to your liking)
Blueberry Sauce Ingredients:
- 1/4 cup fresh blueberries
- 1/2 TBS fresh squeezed lemon juice
- 1/2 tsp vanilla extract
- Liquid stevia (to your liking)
You’ll want to get your pancake mix ready and before pouring on to skillet, start the blueberry sauce in a separate sauce pan.
ingredients well. (Since these are single serving pancakes, I use the Magic Bullet). Pour batter on to heated skillet to form pancakes. Once you see a few bubbles, check to see if they’re ready to be flipped. (Since these are protein pancakes, you won’t see as many bubbles as a traditional pancake). Once flipped, cook for about 30 seconds to one minute and stack up high on a plate.
Blueberry Sauce Directions:
Place blueberries in sauce pan and crush. Turn heat on and add lemon juice and stevia. Once sauce comes to a boil, add vanilla extract, and turn down heat to a simmer.
Once pancakes are ready, stack those babies up high on a plate and top with your delicious homemade blueberry sauce, maple syrup, agave, or honey! Yummers!!!
