If it were up to me, I would have breakfast for breakfast, lunch, and dinner. I am a breakfast lover, so I hope y’all don’t get sick of my posting breakfast recipes (because trust me…there are MANY breakfast recipes to come…and no, I’m not from Texas, I just like saying “y’all”).
Every weekend I play around with recipes, adding a little of that, taking out a bit of this, combining some of that, and sometimes the final result is AWESOME (and sometimes not quite so awesome…gotta win some and loose some eh?). Well, I finally came up with these pumpkin protein pancakes holy cow these bad boys are AWESOME. They are by far the most scrum-diddily-umptios pumpkin protein pancakes I have ever made!
- 2 Egg Whites
- 1 1/4 Tablespoons Unsweetened Almond Milk
- 1 Scoop Protein Powder (I have been using About Time Cake Batter flavor because that is what is in my pantry at the moment, but I’m sure Vanilla would be amazing as well).
- 1/4 Cup Pumpkin Puree
- 1/4 Cup Oats
- 1/4 teaspoon Baking Powder
- 1/2 teaspoon of Cinnamon (do yourself a favor and do NOT skip this part. The aroma is out of control).
Mix all ingredients together in a blender and blend until batter is smooth. Pour batter onto heated skillet. I use a square one. The batter should come out just like what your typical pancake batter. I usually make about 4 to 6 round pancakes, depending on the size of how they pour out. After a few minutes, check to see if the bottom of the pancake is “sturdy” and ready to flip. Flip them over and let them cook for a minute or so on other side. Take off, stack on your plate, and top with whatever toppings you like. These pumpkin protein pancakes taste so good that they honestly don’t even need a topping. I usually accompany with fresh mixed berries.
**Side note: If you are like me and have no time during the week to cook, this is a really easy recipe to make a bunch ahead of time and freeze. I usually make 5 batches (multiply the above ingredients by 5) and put into the blender, cook all the pancakes, and then portion out for each day and freeze. They defrost super easy and still taste AMAZING!
